Abstract: The population dynamics and antagonist activity of the yeast Yarrowia lipolytica M18/3B grown in basal medium NYDB modified a water activity (ɑw) of 0.97 with different solutes; glucose, glycerol, and NaCl were evaluated in apples. The results show that the highest development on fruit, was with the yeast grown in media modified with glycerol, followed by glucose and NaCl. Regarding, the antagonist activity against Penicillium expansum there were no significant differences between the glucose and glycerol treatments with respect to the basal medium.
